Cooking Methods
Steaming is one of the best cooking methods to preserve vitamins and
minerals in foods. Place the food in a steam basket, sieve, or colander
above boiling water and cook in the rising steam.

Microwave cooking is another way to prepare foods, especially vegetables,
which cook quickly in very little water.

Boiling or simmering fruits and vegetables is an acceptable cooking method
but will result in loss of some nutrients in the cooking water. Be sure to
use only a small amount of water and save the cooking liquid to thin the
pureed food to eating consistency.

Since babies do not have a preference for salty or sweet, you should not add
salt or sugar to their food. It's a good idea to keep your child from
developing an early taste for such additions. Studies suggest that feeding
babies too much sodium may trigger high blood pressure later in life in
those individuals who are likely to develop high blood pressure.

BABY TEETHING CRACKERS

2 1/4 C. whole wheat flour
1/4 C. cornmeal
1/4 tsp. salt
2 T. sugar
1 egg, beaten
3/4 C. milk (try a little less first)

Preheat oven to 325ºF.

In food processor or in large bowl, stir together the flour, cornmeal, salt
and sugar. Add the egg and mix well. Blend in enough of the milk to form a
dough that will hold together in a cohesive ball.

On a floured surface or pastry cloth, roll into a rectangle about 3/8 inch
thick. With a sharp knife, cut the dough into 1 1/2 x 3-inch rectangles.
Place them on a lightly greased or parchment-lined baking sheet. Prick each
cracker 2 or 3 times with the tines of a fork. Bake for 60 to 70 minutes, or
until the crackers are thoroughly dry. Cool on a rack. These crackers should
be hard. If necessary, put them back in the oven for a few minutes. Yields
10 to 15.

1 egg
1 1/2 cups milk
425g can of pears in juice or syrup
1 Tbsp butter

Method
Mix the first three ingredients thoroughly in a medium-sized pot. Add the egg, milk, and all the liquid from the cans of pears, and stir everything together until there are no lumps.

Cut the pears into smaller pieces. Put the pears in individual dishes with the custard on top, or serve the pears alongside the custard.

Take off the heat when the custard bubbles and is thick and creamy. Serve warm or cold with canned, stewed, or lightly sweetened sliced raw fruit.
