Potatoe & Leek Soup - does anybody have a good recipe Lock Rss

My husband and I both love Potatoe & Leek soup but I can't find a receipe for it anywhere. Does anybody have any good suggestions?

bag of poatoes
1 leek
1/2 an onion
1 bayleaf
pepecorns
vegetable stock

peel and wash the potatoes and cut them up.
dice the onion and leek and chuck it all in a big pot. cover it with vegetable stock.
place 1 bay leaf and a couple of pepercorns in the pot and boil it til the potatoes are soft.
once they are cooked through. fish out the bayleaf and pepercorns.
get a stick mixer or blender and put everything in it, except the bayleaf and pepercorns, and blend it til its smooth.
then serve it with bread and a sprinkle of chives on top.

hope this helps. its good and baby can have it too.
it also freezes well for next time.
