Great healthy pasta for the kids, add cheese on top and bake for something extra special!
- 1 capsicum
- 1/2 onion (optional)
- 4-5 mushrooms
- 1/2 a 410g tin of corn kernels
- 1 400g tin of chopped tomatoes
- Cooked pasta (I like to use risoni as it is small and easy to eat)
- Cook capsicum and onion in 1T of olive oil for 4 minutes.
- Add mushrooms and corn.
- Cook for 4 more minutes.
- Add tomatoes and cook for 15 minutes.
- Blend then add cooked pasta.
