Mini muffins are fantastic served straight from the oven. But a great idea is keeping them in the freezer for snacks and lunch boxes for the kids!

Ingredients
- 2 zucchini grated
- 1 onion finely chopped
- 3 bacon rashers
- 1 cup grated cheese
- 1 cup s/r flour
- 1/2 cup oil
- 2 eggs
Instructions
- Combine all ingredients together.
- Spoon into mini muffin tray.
- Bake at 150-180 for approx 15 minutes.
- Makes 48 & freezes well.
