Banana and Date Slice

Ingredients

  • 1 C wholemeal flour
  • 1/2 C wheatgerm
  • 1 t baking powder
  • Pinch salt
  • 3/4 C chopped dates
  • 1/2 C milk
  • 75g butter (melted)
  • 1 egg (whisked)
  • 1 ripe banana (mashed)

Lemon drizzle icing (optional)

  • 1/2 lemon (juice and zest to sprinkle on top)
  • 1/2 – 1 C icing sugar

Instructions

1. Mix dry ingredients, add dates, then milk, butter, egg and banana. Spoon into lined 20×20 square tin and fan bake for 20mins at 175degC or until browned.

2. When slightly warm, ice with lemon drizzle icing (lemon juice and icing sugar) and sprinkle with zest.

Cut into squares and enjoy!
