Baked eggs with spinach and soldiers

Summary

You know what makes this taste even better… when someone else cooks it for you and serves it in bed! This delicious breakfast happens to be rich in Omegas, iron, folate, fibre and protein, yet low in fat, GI and calories. This is a great breakfast when health is a priority, but so is taste. Ingredients

Serves 2
5 Min prep
10 Min cook

  • Olive oil spray
  • 2 free range eggs
  • 2 handfuls baby spinach
  • 2 slices wholegrain bread, toasted, cut into soldiers

Instructions

1. Preheat oven to 200C.
2. Spray two 1/2 cup capacity ramekins or ovenproof dishes with oil.
3. Divide the spinach between the dishes. Crack an egg into each dish.
4. Place on a baking tray and bake for 8-10 minutes or until the eggs are just set. Serve with the wholegrain soldiers.

Mish Tips

  • If you don’t own any ramekin dishes (although you can get them at most cheap home wares shops), you can cook these in a mug. Not quite so elegant but still tastes the same!
