Macaroni and Swedes
If you’ve never cooked with swedes before then here is a simple recipe to introduce your family to this sweet vegetable. Swedes are cheep and contain potassium, vitamin C and the B vitamin folate. I’m told that they’re harvested in NZ year round. Now, onto the good stuff…
- 1 swede, peeled and cut into chunks
- 1 teaspoon sugar
- 2 tablespoons cream
- 1 cup of reserved cooking liquid
- 250g macaroni pasta shells
- 1 1/2 cups milk
- 2 spoons corn flour
- Grated cheese
1) Put the swede and sugar in a saucepan and cover with cold water. Cover saucepan and bring to the boil. Reduce heat and simmer until the swede is tender and golden in colour, about 15 minutes.
2) When cooked reserve a cup of the cooking liquid and drain the rest, then set aside to cool.
3) Cook the pasta according to instructions on your packet then drain. Drizzle with extra virgin olive oil, toss, cover and set aside.
4) To make the white sauce stir in corn flour to the cold milk. Bring milk to a gentle simmer on the stove top, stirring constantly until sauce thickens, about 15 minutes. Season with salt and pepper and take off the heat. Allow to cool for 2 minutes before mixing in a handful of grated cheese.
5) Pre-heat oven to 180 degrees celsius. In an oven proof dish combine the pasta and white sauce.
6) To make the swede puree put cooked swede into a food processor or blender with cream and process until smooth. Add reserved cooking liquid as required to make a smooth puree. Fold puree into pasta and top with another handful of grated cheese, sprinkle with parsley and pop in the oven for about 15 minutes. (Dried parsley will do the trick if you don’t have fresh, like me!)
The macaroni and swedes are a delicious meal that my husband says he likes better than regular macaroni and cheese but for a more balanced meal try these variations…
Variations for toddlers as in photo: Add a portion (maybe 250g) of lamb mince into your white sauce mixture.
Variations for bigger kids: Serve with a side of greens and lamb cutlets or a cheaper cut of lamb.
