Fresh Summer Prawn Fajitas

Prawn fajitas

Ingredients

  • 8 fajitas
  • 1 tomato
  • 1 spanish Onion

Guacamole ingredients:

  • 1 avocado
  • 1 tomato
  • 1 red chilli
  • 1 spanish onion
  • 1 lime

Prawns ingredients:

  • 1kg prawns (shelled)
  • 1 spanish onion
  • 2 limes
  • 2 cloves of garlic
  • 1 red chilli
  • 1 teaspoon olive oil

Instructions

  1. Marinate shelled prawns in 1/2 cup lime juice, the zest of 1 lime, a clove of crushed garlic garlic and 1 teaspoon chopped chilli (according to your taste – do not include chilli if giving to the kids!) Leave to sit for a few hours.
  2. Add a small amount of oil to a hot pan and once sizzling, add 1 crushed garlic clove and 1 sliced spanish onion and cook until onions are translucent.
  3. Add prawns and cook for approximately 1 minute or until aromatic.
  4. Mash avocado and add 1 chopped spanish onion, chopped chilli, chopped tomato and a squeeze of lime to make guacamole
  5. Heat fajitas in the oven and serve with guacamole, prawns, chopped fresh tomatoes and slices of spanish onion.
