It’s takes a while to cook (though easy to make!) but it’s worth it when the slow cooked goodness of the bacon is swishing around your belly. Get a big hunk of bread to soak up those juices.

Bacon Hock And Vege Soup

Ingredients

  • 1 bacon hock
  • 2 carrots peeled and chopped
  • 1 swede peeled and chopped
  • 1/2 a pumpkin chopped up
  • 1 onion chopped chunky
  • 1 garlic clove
  • 1 can of chick peas
  • 1 parsnip chopped
  • 2 potatoes peeled and chopped
  • 2 kumara peeled and chopped
  • 3 celery sticks chopped
  • 1 pint of chicken stock
  • Salt and pepper seasoning
  • Finely chopped parsley

Instructions

  1. All popped into the slow cooker for approx 10 hours on low
  2. In the last two hours take the bacon hock out and cut the meat from the bone
  3. Place back into slow cooker and allow soup to thicken.

Yummy on a winters day served with whole grain bread =)
