mummies who like to bake their Rss

Can you throw me some recipes please...pretty pretty please.

My kids are getting a bit bored with fruit etc at snack time. I seen someone said something about healthy muffins on here the other day so that would be a good start.

I'm after everything healthy you can think of (my kids will eat almost any food, so whatever you've got), and even a few not so healthy would be good too dp likes snacks for work LOL might be able to sneak some healthy ones in without him knowing. Thanks Heaps anyone that helps smile
DD LOVES these muffins, I bake in bulk once a week and freeze them. You can sub any veg you like in.

1/2 C milk
1 1/2 C SR wholemeal flour
1/4 C oil (I use carotino oil)
1/2 C grated cheese
2 C mashed pumpkin
1/4 C chopped basil
1 egg
1/2 tsp baking soda

Mix all ingredients, bake 180 degrees in mini muffin tray for 12 mins. (Makes 24-30 mini muffins)
Here's a (mostly) healthy fruit slice and a not-so-healthy biscuit recipe.

FRUIT SLICE
1 cup SR flour
1 cup soft brown sugar
1 cup coconut
1 cup mixed fruit (I use sultanas, currants and choc chips!!)
2 tablespoons butter/ margarine, melted
2 beaten eggs
mixed spice

Mix all ingredients together. Add a little milk if mixture is too stiff.
Sprinkle cinnamon/ nutmeg on top. Scatter slithered almonds on top or lightly press in walnuts (optional).

Cook in a lined (one a bit shorter than a lamington tin is ok) pan in moderate oven – 180? C – approx 20-25 minutes.


JELLY BEAN BISCUITS
125g soft butter (not melted)
3/4 cup brown sugar, firmly packed
1 egg
1 1/3 cups self raising flour
1/4 cup cocoa powder
Jelly beans

1. Heat oven to 190 degrees celcius. Line baking tray/s with greaseproof paper.
2. Beat butter and sugar in a bowl with electric beaters until light and fluffy. Add egg and beat well.
3. Stir in sifted flour and cocoa; mix well.
4. Roll tablespoons of mixture into balls; place about 3cm apart, on baking tray/s. Press a jelly bean in the centre of each ball.
5. Cook in oven for about 12 minutes, or until firm – watch the bottoms; if the tray is on the lower shelf of the oven, they may burn. Stand biscuits on tray for 2 minutes before cooling on a wire rack.
