yum!! found a recipie from my childhood Rss

easy peasy yummy and healthy snack, great as party food or for lunch boxes and is safe for little ones too (provided theyve had egg and cheese)

-simply make a cheese mix with about a cup of grated cheese/s, an egg white, big dollop of sour cream, parsley and a big scoop of cream cheese (like philly) mix it well

-spread over 2 sheets of shortcrust pastry. place another sheet of pastry on top and press down firmly so you have 2 'sandwiches'

-choose your fav cookie cutter and cut out shapes (or just cut into triangles)

-place on a lightly greased oven tray and brush with egg yolk, sprinkle some seasame seeds on top and bake @ 190 degrees for 15mins


YUMMMOOOO smile makes a soft savory 'biscuit' thats easy for young kids to chew. you can use any cheese really but tasty and mozzarella are best IMO. best eaten warm but great @ room temp too. dont store in the fridge as they go soggy, just pop in a container in the cupboard and use within a couple of days.
could you freeze them?

not sure if you would cook them first or make them and freeze them before cooking.

like any frozen pastry its best to half cook them then freeze. then when you thaw them you can pop them into the oven to finish them cooking and keep them crunchy. its also not a good idea to re-freeze raw pastry as it wont puff and crunch up properly the second time its thawed. xx
They sound yummy! I have to take a plate of something to mums group next week as we're having a baby shower for one of the ladies and I wasnt sure what to take... Now I can make these! smile
