omelette, baked beans, pumpkin soup (messy but good smile ), leftovers from dinner (I make a big batch of risotto and freeze portions for bub lunch), homemade sausage rolls or pizzas or quiche.

thanks everyone smile
if you dont mind would you be able to give me your risotto recipe ds loves rice smile
Ha! Recipe?! I don't do recipes, I like just throwing stuff in until it tastes good! lol
So here's a basic rundown:
If doing meat and/or onion, lightly cook in olive oil. Add rice and cook until translucent-ish. Add a splash of white wine, boiling water and chicken stock powder. Add any vegies you have diced, and some mixed herbs (I use pumpkin, carrot, peas and corn, cauliflower, brocolli, zuchini, spinach). If I'm not doing meat, I just chuck all the ingredients in together and simmer until cooked. Cook until rice is tender, add more boiling water if necessary, or drain excess off if you started with too much. When all is cooked, add some grated cheddar cheese. Optional extras at the end are sour cream if you want it creamier, or diced tomato to freshen it up.
Its easy and the kids love it! grin

My daughter loves corn fritters, You can add lots of protein and fibre is you blend or mash up a can of drained chickpeas and reduce your flour. They go over a treat and the are so yummy.

my littlies love a tin of salmon (no bones tho!!) mixed with cooked pasta, very quick and easy!

You could try this, its easy and DD (and DH) LOVES it!! It makes about 8 portions and i freeze them smile
Zucchini Slice:
5 eggs

3 zucchinis, grated
1 large onion, finely chopped
200gm bacon, finely chopped
1 cup grated cheddar cheese
1/4 cup vegetable oil
Preheat oven to 170*c. Grease and line pan.
Beat the eggs in a large bowl until combined. Add the flour, beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Pour into the prepared pan and bake in oven for 30mins or until cooked through.
