Have recently discovered this brilliant yet simple recipe for passionfruit slice, which is basically caramel slice without the caramel and chocolate, and was the crowd favourite at a recent BBQ! here goes -

Make a standard caramel slice base (1 C SR flour, 1 C coconut, 125g melted butter) with 1/2 C castor sugar instead of the usual brown sugar, press into foil-lined slice tin and cook 10-15 mins in mod. oven.

Mix in bowl one tin of condensed milk, 1/2 C lemon juice and 1/3 cup passionfruit (I didn't have any real passionfruit, I used EasiYo passionfruit topping instead!). Spread over cooked base, then cook another 10 mins until the topping has set (don't brown the topping like caramel slice!).

Dead easy and delish!
